Floral Fugue moves in a lighter direction, built with rose-infused gin, green apple, lime and elderflower for a floral, tart and aromatic expression. Aria Dolce leans into cacao-buttered rum, coffee-infused red vermouth, strawberry, vanilla and bitters, creating something sweet, savory and lush.

Nocturne in Crimson carries an earthy and smoky profile, with beetroot-infused tequila and mezcal giving it a darker, more textured direction. It feels connected to the room itself: low light, quiet intensity, something slightly unexpected.

Hypothetical brings a different kind of depth, with dark rum-based amaro, hazelnut, coffee liqueur, aromatic tincture and super juice. The result is sweet, nutty and velvety the kind of cocktail that feels made for a slower table and a longer conversation.  

These are drinks for guests who want something with weight, but still refined enough to unfold gradually.

For Something Floral, Bright or Aromatic

If the evening asks for something more lifted, the menu has a softer, more aromatic side.

Floral Fugue is built around rose-infused gin, green apple, lime and elderflower, giving it a floral and tart direction. It is expressive without feeling heavy, a good choice for the beginning of the night.

Bubbly Rhapsody brings dry gin, elderflower, bergamot liqueur, lime and prosecco together in a floral, citrusy and electric profile. It feels brighter, more playful and more social, while still staying within the elegant mood of Sous Sol.  

These cocktails work well when you want the drink to feel fresh, aromatic and slightly luminous.

For Something Exotic, Textured or Unexpected

The Sous Sol menu also has drinks that feel more playful in construction, without losing the bar’s darker undertone.

Zephyr combines reposado tequila, spiced lime and coconut, orange liqueur and a smoke bubble. Aromatic, complex and exotic, it brings a more theatrical detail to the table without turning the drink into a gimmick.

Pinocchio uses gin, vermouth, bitter, pineapple and basil for a bitter, tropical and exotic profile. It has contrast, freshness and a slightly mischievous edge.

Glamorous Martini moves through passion fruit, super juice and vanilla mousse, creating an exotic, floral and sour cocktail with a softer finish.  

This part of the menu is for guests who want a drink with movement, something layered, fragrant and a little harder to predict.

For Something Creamy, Nutty or Lush

Some cocktails are made to feel rounder, smoother and more indulgent.

Whispering Almond brings together amaretto, bourbon, super juice, orange and plant-based clarification. It is described as nutty, sour and creamy, which gives it a beautiful balance between comfort and precision.

Aria Dolce has a richer profile, with cacao-buttered rum, coffee-infused red vermouth, strawberry, vanilla and bitters. Sweet, savory and lush, it feels like one of the menu’s more sensual choices.  

These are not dessert cocktails in the obvious sense. They are textured, layered and built for people who enjoy a softer finish with real structure behind it.

Non-Alcoholic Cocktails with the Same Intention

A good cocktail menu should not make the non-alcoholic section feel like an afterthought.

At Sous Sol, the non-alcoholic options are still built around flavor, texture and mood. Uptown Girl combines honey, lime, gomme syrup, carrot and ginger concentrate and sparkling water, with a spicy, aromatic and earthy profile. High-Five brings citrus cordial, black cherry, carbonated roasted pineapple and vanilla foam into a citrusy, exotic and creamy drink.  

The idea stays the same: you are still choosing a proper drink, not just an alternative.

Beyond Cocktails: Spirits, Highballs and Slow Sips

The Sous Sol menu also leaves room for guests who prefer spirits, whisky, gin, rum, tequila, mezcal or barrel-aged drinks.

The barrel-aged section includes drinks such as Nimbus, Rusty Dusty and Stag Highball, built around Glenfiddich 12 Y.O. with herbal, cherry, cinnamon, ginger, pink peppercorn or carbonated fruit notes depending on the serve.  

This gives the menu a wider rhythm. You can begin with a signature cocktail, move into a highball, choose something spirit-forward, or ask the team for a recommendation based on what you usually like.
